Hosting a Harry Potter themed birthday party . . .

You can have snacks like those little pretzel sticks and you can cut cheese up and wrap it on the bottom of the pretzel stick to look like a broom.

If your kids like blueberry jello you can make that and swirl whip cream at the top to make it look like a pensieve, or you can use any flavor of jello and label it a pensieve.
 
take a recipe you have, even if its for butter beer, and put all the ingredients out and have each kid make up a batch(like a potions class), and whoever makes it best gets a prize(not felix felicitus, but something cool).
 
I bought a chocolate frog mold from amazon for $5 as an add-on item. Very easy to make them--just microwave some chocolate chips, scoop a little melted chocolate into the mold, add a teaspoon of filling (I used apricot jam for some and peanut butter for others), then spread with more melted chocolate. 10 minutes in the fridge and they're done.

Bought two 6-packs of Bertie Botts for 11.40 per 6-pack, and an 8-pack of Wizard Glasses for $12. Also a Wizard Snowy Owl for the birthday girl for $11.

Made a cut-out of the "Have you seen this wizard" by printing on large-format paper (in two halves), plus the prisoner number. Pasted the halves onto foamcore, so each guest could have their picture taken inside the frame, holding the prisoner number.

Printed school crests, Platform 9 3/4, and "No Muggles Allowed" signs on color printer, taped to walls.

Bought a pack of 25 plain invitations and envelopes. Printed Hogwarts welcome letters, personalized to each guest ("Miss J Smith, Cupboard Under the Stairs, 4 Privet Drive, Little Whinging"), added the Hogwarts crest to the outside, and "sealed" with a printed red wax seal. The rest of the envelopes were addressed to Mr H Potter. Hung all of them from the ceiling with thread, and each guest found their letter as a keepsake.

My niece had a Harry Potter themed graduation party last summer. We played Bean-Boozled and "Quidditch" and someone made Butterbeer and the Golden Snitches mentioned above. We did a lot of pictures, since everyone dressed up.

I wonder if you could download some of the music from the movies to play in the background?

And you could always print some Harry Potter word search puzzles, coloring pages, etc. for filler or to roll up scroll-like as favors.
 
My son went to a HP themed birthday party and in addition to decorating wands and being sorted (of course he was sorted into Slytherin!!!insert sarcasm here...) they also had several of the themed foods previously mentioned and they made quills too by gluing a long feather onto a regular pen. My DS loved using that afterward!

I was going to post a link to Epbot, she just did a Potter party. She has a great tutorial for floating candles that isn't difficult and would look awesome, and I think she's got a printable for her chocolate frog boxes on her website as well.
 
My friend had a party for her daughter and they used a sorting hat that talked (something she had from Halloween) and her older daughter (and friend) hid upstairs and spoke through the hat to sort the party kids. The best part was the decorations in the "great hall" (her dining room). She took battery operated candles (like you put in your window at Christmas or use with kids at church) and used clear fishing line to hang them from the ceiling. When you walked into their dining room..all of the dangling candles glowed and just looked like they were hanging in mid-air....It was very cool! Also...she just used dowels for wands and put out markers and craft supplies (like feathers, sparkly stick-ons, etc). The girls just drew designs on them and glammed them up.....
 
What a great idea to put in the baby monitor! After spending hours online last night and today, I am fairly certain I am going to order the animated sorting hat from Universal merchandise. I think the kids will love it. I was surprised that DH agreed to dress as Dumbledore, but in looking online, there is a real dearth of Dumbledore costumes available for purchase. What did your husband use for a costume? I do a pretty good Bellatrix LeStrange, and I was considering getting an Einstein wig and a fancy jacket for DH and having him be Ollivander.
We went to a local costume shop that just had a fancy pants old wizard costume for rent. It didn't look exactly like Dumbledore but was close enough for 7 year olds. Bellatrix sounds cool!
