Does anyone have an outstanding homefries recipe?

The company I work for is hosting a breakfast for the employee's, and the person who used to make the best homefries, has lost his recipe! :scared1:

Can I ask what are homefries? Are they thick chips (fries) or something different :confused3
 
Homefries are pan fried potatoes that you usually have with breakfast. Whenever I make boiled potatoes I always make a few extra to have the next morning. Take the boiled potatoes and slice them into thick slices (half or quarter slices depending on your taste). Pan fry in a mixture of butter and olive oil (I use about 2 tbs of each for 6 medium potatoes) along with some minced garlic until crispy, season with salt & pepper. Sometimes I will dust with a bit of paprika.

EDIT: just realized I forgot to add onions to taste.

To make homefries even faster, used canned sliced potatoes, as they are already cooked.

Thank you for that recipe greeneyes. I love me some homefries. Everytime I go to IHOP or another place for breakfast I always order homefries. HMMMMMMM, my favorite.
