Holiday Recipe Exchange sent/received thread...COMPLETED!!

I am such a baking fool. :teeth: Last weekend I made pumpkin cream cheese muffins, this past Tues. I made banana muffins (dh really didn't want these so gave some to our friends) and tonight I just finished chocolate chip cookies. :hyper:
 
I love to bake too, Heidi ::yes::
I do a lot of it, especaially cookies.

Cranberry Decadent Cookies

Amount Measure Ingredient -- Preparation Method

1/4 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon cinnamon
1/8 teaspoon baking powder
6 tablespoons butter -- softened
1/2 cup sugar
2 large eggs
8 ounces semi-sweet chocolate -- chopped
2 cups white chocolate chips -- divided
1 cup dried cranberries
1 pinch salt

Preheat oven to 350º F. Grease large cookie sheets.
Melt semi-sweet chocolate over low heat in the top of a double boiler or in the microwave (at 50% power) and cool. Combine dry ingredients: flour, cocoa, cinnamon, baking powder and salt. In a large bowl, cream butter.
Add sugar and beat until light and fluffy. Add eggs and beat until smooth. Stir in melted chocolate.
Add dry ingredients and mix well.
Fold in 1 cup white chocolate chips and the dried cranberries.
If dough feels very soft or wet, chill for 10 minutes.
Drop by teaspoons on to greased cookie sheets.
Bake until cookies look dry and cracked but still feel soft when pressed lightly, about 8 minutes. Remove from oven and let stand on sheets 3 minutes. Remove to rack and let cool completely.
Place 1 cup white chocolate chips in a microwaveable bowl. Microwave on medium (50%) power for 30 seconds. Stir.
Continue microwaving for 10 seconds and stir again. Repeat just until white chocolate is melted. Scrape melted white chocolate into a ziplock baggie.
With a sharp scissors, snip off a very small corner of the baggie.
Drizzle top of cookies with zig-zags of melted white chocolate. Cool until chocolate is set.

Granola Fudge Clusters

Prep/Total Time: 25 Min.

1 cup semisweet chocolate chips
1 cup butterscotch chips
1 1/4 cups granola cereal (without raisins)
1 cup chopped walnuts



In a microwave-safe bowl, melt chocolate and butterscotch chips; stir until smooth. Stir in granola and walnuts. Drop by tablespoonfuls onto waxed paper-lined baking sheets. Refrigerate for 15 minutes or until firm.

Yield: About 2 1/2 dozen.

Chocolate Comfort Cookies

1 cup hazelnuts -- chopped
2 cups semisweet chocolate chips
1/2 cup dried cranberries
1 cup unsalted butter -- softened
1 cup sugar
3 ounces cream cheese -- softened
1 egg
2 tablespoons low-fat milk
2 ounces unsweetened chocolate -- melted
1 1/2 teaspoons vanilla
2 cups plus 2 tablespoons flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup Dutch processed cocoa
1 cup marshmallow cream

Preheat oven to 325.
Spread nuts on ungreased cookie sheet and roast 7 to 12 minutes, or until they are lightly browned and some skins have loosened. Set aside to cool.
Butter 2 cookie sheets.
In a large bowl combine chocolate chips, cranberries and cooled nuts. Set aside.
In another large bowl, beat together the butter, sugar, cream cheese and egg until very creamy and smooth. Beat in milk, melted chocolate and vanilla.
Sift together the flour, baking powder, salt and cocoa. Add to the butter mixture. Blend in the
marshmallow cream stirring until thoroughly combined. Add the chip mixture. Stir until well mixed. Batter will be thick.
Using a 1/4 cup measure or a 4 tablespoon ice cream scoop, measure out batter and place 2" apart on cookie sheets, putting no more than 6 cookies per sheet.
Bake 13 to 17 minutes, until puffed and cooked through. Cool on sheet 1 minute. Then transfer to a wire rack to cool completely.

Yes..we are doing the half!!! We will be there the 31st - January 16th. :cool1:

Russian Tea

1/2 cup instant tea (decaf can also be used)
2 cups Tang powdered orange drink
1 1/4 cups sugar
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves

Mix together and store in covered jar. Use 3 teaspoons per cup of hot water. Makes 3 1/2 cups.
