Found this on Family Fun this morning.

Pumpkin Smoothie
Servings: 2 or 3

1/2 cup canned pumpkin
3/4 cup milk or vanilla yogurt
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
2 teaspoons brown sugar
4 ice cubes

Combine ingredients in a blender and puree until smooth. Pour into small glasses and garnish with a dollop of vanilla yogurt or whipped topping.
 
I am picking up my kitchen items tomorrow so I hope to have my package in the mail on Friday am.

BTW Meriweather I could really go for one of those oreo brownies...they sound so tasty.

Banana French Toast

Amount Measure Ingredient -- Preparation Method

2 medium ripe bananas -- sliced 1/4" thick
1 tablespoon lemon juice
12 slices French bread -- 1/2 inch thick
1/2 cup semisweet or milk chocolate chips
2 eggs -- beaten
3/4 cup milk
2 tablespoons honey
1/2 teaspoon vanilla
1/4 teaspoon ground cinnamon
1/4 cup sliced almonds
1 teaspoon sugar
Maple syrup -- optional

In a bowl gently toss bananas with lemon juice.
Arrange half the bread slices in the bottom of a greased 2 quart square baking dish. Top bread with a layer of bananas, chocolate chips and remaining bread slices.
In a medium bowl combine eggs, milk, honey, vanilla and cinnamon. Pour slowly over bread to coat evenly. Cover and chill for 6-24 hours.
Preheat oven to 425 degrees. Uncover the baking dish.
Sprinkle bread with almonds and sugar.
Bake for 5 minutes. Reduce oven to 325 degrees.
Bake 20-25 minutes more or until knife inserted near the center comes out clean and top of French toast is lightly browned. Let stand 10 minutes.
Serve with maple syrup, if desired.
 
I'm getting very very hungry...and am starting to crave pumpkin pie.

Pumpkin Bread

2 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup pumpkin
1 cup sugar
1/2 cup milk
2 eggs
1/4 cup butter
1 cup chopped nuts

Mix together flour, powder, soda, salt and spices.
Combine pumpkin, sugar, milk and eggs.
Add dry ingredients and butter; mix until well blended. Stir in nuts.
Pour into well greased loaf (9x5x3").
Bake at 350 degrees for 45-55 minutes.

Pumpkin Banana Bread
Ingredients
1/2 cup vegetable or canola oil
3/4 cup sugar
3/4 cup brown sugar
4 eggs
1-1/2 cups pumpkin
1-1/2 cups ripe mashed bananas
1-1/2 cup yogurt (plain or vanilla flavored)
4 cups flour
2 tsp baking powder
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp ginger
1-1/2 tsp nutmeg
1 cup chopped walnuts (optional)


Instructions
Preheat oven to 350 degrees F.

Grease and flour two loaf pans. In a large mixing bowl combine the oil, sugars, eggs, banana, pumpkin, yogurt. Beat until smooth. Sift the dry ingredients together. Stir the dry ingredients into the wet mixture until well blended. Pour batter into the prepared pans and bake for 45 minutes or until golden brown and a cake tester comes out clean.

Yield: 2 loaves

Chocolate and Pumpkin Squares

1/2 cup butter or margarine -- softened
1 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup cocoa powder
1/2 cup canned pumpkin
1/2 teaspoon pumpkin pie spice
Chocolate Frosting
1 cup powdered sugar
1/4 cup cocoa powder
3 tablespoons butter or margarine -- softened
2 tablespoons milk
1/2 teaspoon vanilla extract

Heat oven to 350 F. Grease 9" square baking pan.
Beat butter and sugar in medium bowl until well blended. Add eggs and vanilla. Beat until smooth and creamy. Stir together flour, baking powder, baking soda and salt. Gradually add to butter mixture.
Remove 1-1/4 cups batter to small bowl. Add cocoa, blending well.
To remaining batter, blend in pumpkin and pumpkin pie spice.
Spread chocolate batter into prepared pan. Spread pumpkin batter over chocolate.
Bake 30 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan on wire rack. Frost with Chocolate Frosting.
Cut into squares.
Chocolate Frosting: Stir together powdered sugar and cocoa. Beat butter in small bowl until creamy. Gradually add sugar mixture alternately with milk, beating until desired consistency. Stir in vanilla.

Great Pumpkin Cookie

4 cups flour
2 cups quick-cooking oats
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups margarine -- softened
2 cups firmly packed brown sugar
1 cup sugar
1 egg
1 teaspoon vanilla
16 ounces solid pack pumpkin
1 cup semisweet chocolate chips
Assorted icings or peanut butter
Assorted candies, raisins and/or nuts

Preheat oven to 350 degrees.
Combine flour, oats, baking soda, cinnamon and salt. Set aside.
Cream butter. Gradually add sugars, beating until light and fluffy. Add egg and vanilla. Mix well.
Alternately add dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips.
For each cookie, drop 1/4 cup dough onto lightly greased cookie sheet. Spread into pumpkin shape using a thin spatula. Add a bit more dough to form stem.
Bake for 20-25 minutes. Cool on wire racks.
Decorate using icing or peanut butter to affix assorted candies, raisins and nuts.
Variation: Substitute 1 cup of raisins for chocolate chips.
This makes 32 LARGE cookies.

Pumpkin Cheesecake

Crust
1 1/2 cups graham cracker crumbs
1/3 cup butter or margarine -- melted
1/4 cup granulated sugar
Cheesecake
24 ounces cream cheese -- softened
1 cup sugar
1/4 cup packed brown sugar
2 eggs
1 3/4 cups solid pack pumpkin
2/3 cup evaporated milk
2 tablespoons cornstarch
1 1/4 teaspoons cinnamon
1/2 teaspoon ground nutmeg
Topping
2 cups sour cream -- room temperature
1/3 cup sugar
1 teaspoon vanilla extract

Crust: Combine graham cracker crumbs, butter and sugar in a medium bowl.
Press onto bottom and 1" up side of 9" springform pan.
Bake in preheated 350 degree oven for 6-8 minutes. Do not allow to brown. Cool on wire rack for 10 minutes.
Cheesecake: Beat cream cheese and sugars in large mixer bowl until fluffy. Beat in eggs, pumpkin and milk. Add cornstarch, cinnamon and nutmeg. Beat well.
Pour into crust. bake at 350 degrees for 55-60 minutes, until edge is set but center still moves slightly.
Topping: Combine sour cream, sugar and vanilla in medium bowl.
Spread over surface of warm cheesecake.
Bake for an additional 5 minutes. Cool on wire rack.
Chill for several hours or overnight. Remove side of springform pan before serving.

Okay, ya'll are making me really hungry! :flower: I went to Michael's today and they had Halloween, Thanksgiving, and Christmas stuff out. My package should go out tomorrow, but I will post when it is definately in the mail!
