Hojo suites

I'm looking into the hojo suites.

The bunk bed-big enough for a large adult? We're bringing auntie. We also need room for 2 cribs. Will they fit in the bunk room?

Also looking at Camelot. they have a decent pool area.

My DD is 5'7" and skinny and she managed in the bunk but she never sleeps with her legs straight out - she sleeps in a queen size bed at home. She was fine though as she was not sleeping with anyone else and was in Disney. The actual dimensions of the bunks are 38" x 75". You could likely fit two cribs in the room no problem - they are small cribs they provide, we saw one once in the hallway. The person limit for the kids suites is 5 though and that includes everyone - so as long as you are within that limit you should be fine but I'd call to make sure they will allow two cribs.
