HHI is low key, so they don't do all that much in house. There will be holiday craft classes (e.g., Mickey wreaths), likely some holiday food specials at Tide Me Over, and perhaps a special social event where they serve holiday themed drinks and foods. The resort will be decorated, though compared to most WDW resorts, it's muted. That's not a bad thing, just this resort is unlike any at the World. I'm sure there are things off resort to visit or take in; just be on the watch for information regarding such in the next couple of months. The Island Packet is the local newspaper, and they will have lists and articles once we get closer to winter. I do know that there are a few places to see lights, such as at a local fire department substation not far from the resort, and Shelter Cove itself puts up lights including many of the boats and yachts anchored there.
Yes, be sure to take a stroll to see the boats and yachts all decorated for Christmas. Also, I think Shelter Cove town center (whatever it's called-where Kroger and Poseidon are) is all decorated and lit up every evening for Christmas.

It is! Last year they had a big Christmas tree in the little park area right across from Poseidon. They also had a lot of the palm trees strung with lights. It was so pretty.
