Help with planning first "real" park visit in a few years

As my heading says, I'm looking for help with planning a quick trip to Disney. I took advantage of Southwest Airline's current sale (ends Thursday) and booked flights from August 27th to August 30th. We land in MCO at apprx 8:00a.m on the 27th and leave MCO at 3pm on the 30th. I didn't adult very well. I was thinking/hoping that on arrival day we would do the Halloween party, but I failed to see IF the party was happening and it is not happening during our stay at all (it happens the day we leave, but we will be long gone)

We've done several trips over the years, including a 2 day non park trip last August. We haven't been to Hollywood Studios in many years, but my ds23 is expressing an interest in seeing the Star Wars "stuff" so there is where I need help:

We will be staying at either Coronado or Saratoga. It will be myself and my ds17 and ds23.
My favorite parks are MK and EPCOT, so those are on the "to do" list. As stated above, DS want to go to Hollywood Studios
Disney Springs (Lego and Gideons) are must do's as well.
No Animal Kingdom or water parks this visit.
Thoughts on which park to do on which day?
My DS does qualify for the DAS, although I'm not sure how it works these days.
 
I guess my first questions would be how much do you want to do in Magic Kingdom? If you don't have to do every attraction but still want to see the nighttime show and parade, I would probably do that your first day. It's also a great park to use Genie+ in. After that I would do Studios your second day, Epcot the last, and Disney Springs your departure day.

I'm trying to avoid going to Epcot on the weekend, since due to food and wine the park will be practically full on Saturday. The other option would be to get a park hopper, do Disney Springs and the resort pool your arrival day, schedule Studios your second day and Magic Kingdom your last day, and hop to Epcot on one of those two days.

DAS works through the My Disney Experience app now. You can set it up ahead of time using a video call, or you can do it at guest relations just like before.
