Help with Epcot TP

After deliberating, I decided to firmly plan a break midweek to use pool and let kids rest more(I have a few days we will be back early in evening too and put midday break in my plans as an option on other days). We are off site, at Hilton Near SW. My kids are 3 1/2 and almost 1.
So The best day I think would be Wednesday, my Epcot day(not an EMH).

Can I get some help maximizing my plans allowing for a break, please and thanks so much.I am thinking leaving Epcot by 12:30 and back 5-6pm. I really enjoy Epcot but think its a place I can cut back with little kids. I would love help so I have a semi plan as to what to do before we leave and what after we return. I also cant think of how it will fit time wise. I will be seeing illuminations at 9. I have a ADR but think Ill cancel it, feed the kids at the resort and get some CS in WS(I love to have an assortment.)

Here are my must see/do in no particular order-
The Seas with Nemo and Turtle talk
Sorin' (with child swap)
Mission space(DH defiantly, I am still debating and if DN isnt going to Epcot, I wont do it alone)
Maelstrom- can I bring 1yo on it?
Spaceship earth
Mexico is closed in May? :sad2:

Test track (again DH may do it but I really dont want to child swap and do things alone)
Honey I shrunk the Audience. Is it worth it? We will visit each park and do the other 3D shows. I dont remember this one being special.

I do want to walk WS and see what we can fit in. Ill also take recommendations of things I overlooked that I should see. I havent been since '02(no kids)

For me wıth kıds that young ı would have a break everyday. If not by the 2nd or 3rd day you wıll have a breakdown. As far as you epcot day. Pıck the must rıdes and do those fırst thıng by beıng there at rope drop. Rope drop at any park ıs esentıal to good tourıng. Then after all major thıngs have been seen or done go back to hotel for short swım and nap. then return to park for your dınner reservatıons and enjoy a nıce meal and watch the show. But my advıce for any park at any age ıs to take a break ın the mıdday wıth tıckets of 3 days or more you wıl get a lot more out of a parks wıth small 2 hour breaks at mıd day.

Thanks so much- I guess that is more my question- is there a must see order that would work best with what I want to see, like an order better then another. I mean I know do what I want to see first, but in order of whats hardest to get into and longest lines, I need a plan.
As for breaks, I have read so very many different views on this, so all I can do is allow for it and see what my family needs. I dont plan to take a break if AK closes at 5 pm. If they are that tired, we can leave before then, pointless to drive back and forth. Thats why I planned short and long days alternate.
