Help with dinner reservations!

So our trip is coming up in August for my bday and I havent made any reservations!! I used to be spoiled (as a FL resident passholder) and never needed any reservations - besides Cinderella's castle & Artist Pointe. So I am new to DIS boards (a few months now) and I have been studying hard but I still don't know what the best places to eat are.

We are only going for 4 days so I would like to pick about 2-3 fancy places to go and the rest cheaper places since we are on a budget.

I am really looking forward to going to the 50s PrimeTime cafe. I am going to try and get reservations for this. I hope its not impossible!! How are the prices there?

I would like to go somewhere very exciting for my 23rd birthday, but not too sure where. Any ideas?

I'd like to try some new places I haven't been to. I am not interested in character breakfasts. Please help! If you had to list your top 3 places, what would they be?
 
If you go to allearsnet.com and click on menus under dining, it will list the prices for meals.

Our top three would be:

LeCellier in Canada in Epcot's World Showcase
Biergarten in Germany in Epcot's World Showcase
Plaza Restaurant in the Magic Kingdom (relatively cheap and a change of pace from all the big meals and they have terrific sundaes!)
 
Narcoossees for dinner and to see the fireworks. Great food and an incredible view :thumbsup2
Boma dinner is also a must do for us.

As the PP suggested its always helpful to look at the menus. Yak-n-Yetti is new, we haven't tried it yet, but are excited to try it this August.
