Help with afternoon and next morning plans?

So here's the plan: my mother and I arrive at MCO at 1pm on a Monday in September, no checked baggage, pick up our rental car and head for Universal. Check in at Cabana Bay isn't until 4, so we should just head on to the parks, agreed?
And if that's the case, what should we do? IOA is open until 7, US til 8:30, should we use that as our guide and do what we want at IOA first (which is basically Spiderman, Jurassic Park, and Hogsmeade) and then head to US for the 5-8 non-WWOHP attractions we want to do? Or does it make more sense to only do US that first day, focusing on the rides outside WWOHP before heading to Diagon Alley at the end of the day for shopping and maybe rides if the waits aren't insane?
Our next day is a half-day at Universal before moving over to WDW, so we really want to get done with Universal by 2ish. We could go back to DA the next morning with early entry for anything we missed, and then we'd either be finishing up rides we didn't do the night before or heading to IOA to Hogsmeade, etc. We do know we want to ride the Hogwarts Express both ways.
Do you think one plan is more efficient than the other, or is it still so up in the air that we should just check wait times when we get there?
 
in past years i would say don't worry about crowds.
great time to be there.

but with hp2 opening, just don't know how the crowd patterns will change.
