You can use last years November hours as a guide. They are likely to be very close. Are you at WDW during Thanksgiving? This will be very crowded and you definitley need ADR's for ALL TS meals you want. Are you on the Dining Plan? We have done the DDP several times in the past. We used our TS (Table Service) credits for dinner not breakfast. We actually had a grocery delivery to our room and bought breakfast foods and ate each morning before we headed out. We used wegoshop.com and ordered juice, coffee, water, soda, breakfast items, bananas, beer, wine, cheese and crackers and snacks for delivery. It worked out great.
Then we had an ADR for Each Night for dinner. If you expect to have a sit down dinner in the evening, I do think you should make dinner ADR's now.
What we usually do is decide which park on which day, based on park hours. Then we choose a restaurant in or near the park we will be in that day. We do not want to spend time travelling to distant ADR's. Don't forget to look at resort restaurants near the park you are visiting.
A TS ADR will take 90 minutes or more of your time. Consider this when you decided how many TS meals you want each day. Personally, we like to get going in the morning and we enjoy a relaxing meal in the evening.
