We are booked for a cruise in April in Miami. We're having to fly AA because SW will not be going there. So my question, if we book on open day and see a cheaper rate later can we cancel and rebook with no fee and with credit in the future?

No. I believe American currently charges $200 per non-refundable ticket to cancel and rebook, so unless the price goes down by more than $200 it will cost you money to do so. Only Southwest and a few other airlines allow you to take advantage of lower fares without paying a fee.
