Help with a weekend trip Off-Property

I am planning a 3-day weekend trip for my gf and me in late January. Being pretty loyal to Disney, I have never stayed off property, so I am going to need some help. For this visit, I am trying to plan a nice weekend with no park tickets. Just relaxing and trying to keep the dent in my wallet to a minimum.

Does anyone have any suggestions for nice resorts where we can relax and enjoy a weekend?

An ideal hotel would have:
- Pool (may be too cold) and jacuzzi/hot tub
- Restaurant options and/or complimentary breakfast
- A nice relaxing lobby area where we could sit (not just a Holiday Inn).
