Help w/60 day nerves..need your wisdom!

I have to admit, I am getting a sick OCD pleasure out of all this planning (this is or 1st Disney vacation). We are close to our 60 day mark and would love any input on Fastpass+ for MK. Here are our details for our MK days:
May 27-June 2 Pop Preferred, family of 4 (2 girls ages 3 and 5)
Sun., May 28 8am breakfast at BOG
Hoping to jump on 7D 1st. After that I wasn't sure what Fastpass+ to book. Our girls love Princess Elena, should we Fastpass+ it? I figure our focus that morning will be Fantasyland. What time should I book our 1st Fastpass+? We will probably take a midday break and come back later.

We are also going to do a 1/2 pm day w/dinner at Royal table and a full open day. Are there any rides that your little ones just loved that I should book twice? Thank y'all so much!

You may want to FP Peter Pan, Enchanted Tales with Belle, and Elena or 7DMT for a 2nd ride.

Book FPs for 10:00, 11:00, and 12:00. Use your 10:00 FP at the end of the window (10:50) and then move on to your 2nd FP. Book your 4th FP as soon as you enter the FP line for FP#3.

You'll have plenty of time to do all 3. Also consider fitting in Tea Cups and the Carousel as time allows.

Yes. You may want a more popular ride second like PP or Winnie since you will have a time advantage.
