Help Us Create Our Thanksgiving Meal!

Hi all,

We live in Canada and we celebrate Thanksgiving this upcoming weekend. I've been looking through recipes online for things like sweet potatoe casseroles and cranberry sauce but it's hard to tell what will be good without recommendations from people I trust. Well, that's why I'm asking all my friends here at the DIS to help me out.

Share with me a traditional favourite from your own Thanksgiving celebrations! (We're looking to serve only 4 people.) I figure this way by the weekend, I'll have all the recipes that I need. You can also share tips on decorating the table or other traditions if you like.

Also, this gives all you Americans a jump on the holiday and you'll be really well organized by the time American Thanksgiving comes around in November.

So who wants to help? Think of it as an online potluck. Everybody bring a dish!
 
Ok our potatoes are not traditional American style by a long shot- but they are a standard at any holiday meal in our family.

Russet potatoes
Farmer Cheese
Butter
Scallions

Amounts vary based on volume you need- think one stick of butter for every 6 potatoes. 1/2 package of the farmer cheese per potato.
You first peel and boil the potatoes. Then melt the butter with the scallions- cook for about 5 minutes- Mash potatoes with cheese and butter scallion mixture- Put in a corning ware dish and bake for about 45 minutes at whatever temperature everything else is cooking at(which is why this is an every holiday dish)
We call them Pierogi potatoes(started with leftover pierogi filling)
 
Mmmm...that sounds to die for! I love perogies with a passion. Maybe we'll do this instead of mashed. This is our first Thanksgiving married and are looking to start some traditions of our own. And what's a tradition if it isn't fattening?! Thanks for sharing, java.

I am shocked you know what a pierogie is!
Nobody, and I mean nobody, wants my help in the kitchen ;)

We have a good sized Polish population where I come from, so most people know how to make them. Sooo yummy!

Green Bean Casserole (from the cambell's web site)

1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup OR Campbell's® Condensed 98% Fat Free Cream of Mushroom Soup
1/2 cup milk
1 tsp. soy sauce
Dash ground black pepper
4 cups cooked cut green beans
1 1/3 cups French's® French Fried Onions



Directions:



MIX soup, milk, soy, black pepper, beans and 2/3 cup onions in 1 1/2-qt. casserole.

BAKE at 350°F. for 25 min. or until hot.

STIR . Sprinkle with remaining onions. Bake 5 min.

TIP: Use 1 bag (16 to 20 oz.) frozen green beans, 2 pkg. (9 oz. each) frozen green beans, 2 cans (about 16 oz. each) green beans or about 1 1/2 lb. fresh green beans for this recipe.

For a change of pace, substitute 4 cups cooked broccoli flowerets for the green beans.

For a creative twist, stir in 1/2 cup shredded Cheddar cheese with soup. Omit soy sauce. Sprinkle with 1/4 cup additional Cheddar cheese when adding the remaining onions.

For a festive touch, stir in 1/4 cup chopped red pepper with soup.

For a heartier mushroom flavor, substitute Campbell's® Condensed Golden Mushroom Soup for Cream of Mushroom Soup. Omit soy sauce. Stir in 1/4 cup chopped red pepper with green beans.

BTW, I like the taste of canned beans better.

My Stuffing Recipe it is over 50 years old.

1 loaf white bread
The night before put slices of white bread on counter over night uncovered.
Next morning slice it into cubes.

Chop onion & celery...can do the night before.

Put neck & gizzard in small pot of water with large pieces of onion, celery,carrots & thyme. Bring to boil & simmer a hour or longer.

Melt a stick of butter in pan add chopped onion & celery until soft.

In large mixing bowl add bread cubes, sauteed onion & celery, thyme & poultry season. Salt & pepper to taste. Then you can add the gizzard water a small amount at a time until stuffing is soft but not soggy.

Keep the extra gizzard broth in the refrigerator until it is time to make your gravy later in the day.



Stuff the bird & put the rest in a buttered crock pot to cook all day.

I also use a crock pot for my mashed potatoes they can be made hours before serving & kept warm. I have a third crock pot for the gravy.

Corn & Lima Beans. It was supposed to be at the First Thanksgiving.

My dad loves lima beans & my mom will only make them on his Birthday:rotfl: I make sure he gets them when I can;)
