You can call many of them directly. I'm away from home right now and only using my phone so its not easy to look up, but before our trip last year, I just googled a lot of the restaurants and found their #'s online.
I was able to change / move and book every restaurant we wanted by calling directly, except for T-Rex at Disney Springs. That is the only dining experience we weren't able to get in a 10 day period. Online, Disney, Concierge, and direct. Apparently that was the hot ticket during our trip. Go figure.....
