I hate to say this but it's pretty much no to all of your questions. They do the Candlelight processional, but it is only one weekend (I think the 1st weekend of Dec?) and they offer meal packages at exorbitant rates ($75 and up per person).
There are special holiday "events" happening-like this year they have Santa's Roundup where you can go see reindeer, pet animals in the petting zoo and do holiday crafty things for kids at no additional cost.
I think the resort hotels have special events going on daily and BB Kings in Downtown has a gingerbread house building event that is rediculously priced ($45 for the first 2 people and $10 each additional person, I Think).
Last I heard they did away with the meal plans. Also, no magical express. Sorry

I wouldn't let this discourage you, we have been to WDW at Christmas time several years and LOVE it, but we also love being at DL this time of year. The holiday decorations and parade are great, think WDW but on a smaller scale. It's also a lot less "hectic" than WDW. Early Dec there are no crowds at all, and it is a relaxing vacation (vs every trip to WDW that we have had).
