Help planning December trip with minimal walking

Your plan has a long walk right off the bat by going from Small World to Haunted Mansion and as others have said, you can't really avoid a lot of walking in the parks.
Sorry, I cannot agree with this. Considering the size of MK, the distance between iasw and HM is not 'long'. It is 450' and 'normally' a 2 min walk.

Long is relative and the effects of walking a lot are cumulative so if the goal is to minimize walking it doesn’t make a lot of sense to go from small world over to Haunted Mansion rather than staying closer to the area around small world. The first strategy I would recommend to someone with mobility difficulties who wants to walk less would be to go land by land not cross crossing and then take breaks between lands to rest.
 
I think this is one of those issues of knowing your audience. I do not think this is the right vacation for your group.

IMO I would not be doing a Disney vacation with this person if they are refusing a mobility device. Disney is a lot of walking, unless you stay at the pool all day. Even on rest days we walk 15k steps.

Your kids are young enough that you can get away with putting them in a stroller but you are going to be beat after pushing that stroller around all day and dealing with an adult with mobility issues that refuses to get a wheelchair or scooter. It just doesn’t sound fun for you.

I know you were gifted Marriot points which is awesome but I would switch the trip and do a beach vacation in Florida. Or something entirely different in the Orlando area.

We took someone with mobility issues who also refused to use any mobility aids and quite frankly it was miserable. The person complained the entire trip but when offered alternatives, refused. So my suggestion is to have a very frank conversation with this person because the last thing you want is for your kids trip to be ruined.
Disagree. The HM is right down from the Small World ride when you cut through the Rapunzel area. It can't be more than 500ft give or take.
 
Here’s a suggestion. The area of Repunzel’s restrooms is right between IASW and HM. There is a sitting area. You can take a short rest there on the way to HM. Then stop at the air conditioned store outside of HM. Then get in queue for HM.
 
Your friend should rent a scooter. Either one in the parks, or one from Gold Mobility that can fit in your car trunk. She is selfishly ruining everyone’s vacation with her stupid pride. I use a scooter because I don’t want to inconvenience the rest of my family and friends and I don’t want to waste my own time on benches.

There are so many other scooters no one will think twice about her using one.

As for your kids, I would play that by ear. I think kids end up with more energy than parents think
while at Walt Disney World. If they end up crashing early in the first day, I would rent a double stroller the next day and allow your kids to take turns in it.
