Help on Length of Stay

Yeah I got a while, leave me alone. ;)

I've been thinking about the trip though, and I know I will have to get a pricing estimate for my boyfriend. So basically I have an idea of what I want. I'll list my generic itinerary and whatever.

Day 1 : Arrive (just do hotelish stuff cuz we probably won't get there until after 4 or so)
Day 2 : A park (will depend on which day of the week this falls on of course)
Day 3 : A different park (same as above)
Day 4 : Relaxation day (Disney Boardwalk, DTD, etc)
Day 5 : Another park (same as above)
Day 6 : Whatever the last park is (lol)
Day 7 : Depart (probably early afternoon flight)

My trip is probably gonna be more relaxed, arrive at parks around 11ish, only ride fave rides, etc. I'm planning on getting the dining vacation package so at least once a day have a sit down meal. I'm also planning first week of December trip.

My question is, should I add another day at the parks and have 2 days at Epcot. I've never had a problem doing all I wanna do in Epcot (last trip I went, we were there for EMH and did all the rides and attractions). Epcot is my fave park so I practically want to do everything. But thats only Future World. Not that I have a problem with World Showcase, I just found it more fun to walk through the shops (and there aren't as many attractions out there anyways). Do you all think I should add an extra day and have two days at Epcot, or do you feel we can do it in one day and be fine?
 
If you plan on doing everything at EPCOT, I would give it two days. I'm not sure what time of year you are going, but that may also need to factor into how many days are scheduled for each park. It took me two days last May and I still didn't see "everything" there. I have been many times so it is rare that I see everything in one trip.
