Help needed for planning park days in December!

Getting ready to book just a few ADR's soon, so need to nail down park days....Please help me!

Going in early December. First timers. We aren't doing MVMCP. 2 adults and 4 kids 10 and under. Trying to decide how to order our days so we don't feel like we are doing too many completely full days in a row. We will try to do early entry at each park except Epcot 1/2 day. We have Genie+. No park hoppers. Staying at Poly. Arrival and departure days are Sat-Sat.

Option 1:
Sun - MK (party night, we won't be attending)
Mon - HS
Tues - Epcot 1/2 day, rest 1/2 day
Wed - MK (full day/stay for fireworks, no party night)
Thurs - AK
Friday - Epcot (full day)

OR

Option 2:
Sun - Epcot (full day)
Mon - MK (full day/stay for fireworks, no party night)
Tues - 1/2 Epcot, 1/2 rest
Wed - HS
Thurs - MK (party night)
Fri - AK

It's a little tricky because only Monday and Wednesday don't have party nights.
I also can't decide if we need two days at Epcot vs HS....? We will want to see the shows at HS, and some big rides (ToT, RnR aren't a priority).

Which option would you choose? Or a different one?
 
Have you consider the late hours at MK and Epcot? Go to park, go back to resort for 2-3 hours, head back out at 7 pm.

Yes, but with the age of our kids, we can’t swing it. 10, 7, 5, and 2. They won’t nap when all in one hotel room, unfortunately.
 
So I'm definitely not a pro by any means, but here is my experience last time and how I'm changing it for this time. We also have four kids, this trip they will be 10, 8, and turning 5 year old twins. Our last trip they were 7, 5, and 15 months. They weren't able to stay up late on that trip, and they also wouldn't nap in the room all together (and we were at the Poly too! 🥰) So what we ended up doing was going out at rope drop (early risers) and staying at the parks until around dinner time, eating dinner and in bed by 8-9ish. That worked every day with no rest days for us, two days at MK and Epcot one for the other two. This trip we are hoping they will be able to stay up "later" (meaning like in the parks until 8-9, they just aren't night people, especially with no naps). But we are going to try a mid day break on the days it's easy to get back to the room (MK and Epcot). I know they won't nap, but they will probably still benefit from laying in the bed watching TV, and if we're lucky someone might accidentally doze 🤞
However, all of this is subject to change for us if the kids just aren't operating the way we expect. Not like that's never happened 😂
