help! Need recipe for Eggplant in Crock Pot

i have never made eggplant in the crockpot but i am about to today. i have sauce, cheese, but i dont want to use bread crumb. anyone have a good recipe or ideas? i searched online but everything has breadcrumb. i guess i can just omit it.

I'm not sure if this will be a crock pot meal, but how about making mini pizzas using the eggplant as the "crust".

Or, instead of eggplant parm, eggplant lasagna. Same flavor profile, and I bet this would work great in the crock pot

Could you make it like a lasagna instead? You could even omit the noodles this way. Otherwise you could use crushed crackers as the breadcrumbs maybe.

Thanks! I looked at those recipes and likes the lasagna idea so I layered the eggplant with sauce, cheese, ricotta mixture (garlic,park,seasonings). It came out great!
