Help me with my quest for non-fried food!

Carthay circle in DCA has quality food, not only non-greasy theme park food but actually great meal choices. And great drinks too!

Catal in DTD has healthy options, tapas style appetizers and interesting salads.

In DCA there is a smoothie place across from animation academy. We get one split into two cups because they are large and that way our two kids can split one. Lots of fresh fruit in the parks. Bring whole grain granola bars, trail mix, cheese and crackers, or nuts in your bag each day to supplement park snacks.
 
In CA the cozy cones in Carsland have some non-fried options. We enjoy the Chili Cone-quesso (Chili served in a bread cone). Paradise Pier is a good place for soups in bread bowls, salads, Chinese food etc. We like having the corn on the cob from the little stands by the Boardwalk. My kids like the soft serve pretzels...for our family of 4 2 pretzels and a cheese dip make a good snack. In Disneyland the Village Haus had baked potatoes last time we were there.

You have had some great suggestions. I really found going through the menus helped. I had a general idea of what was available and where so when the "hungrys" hit I could list off a couple of places and we would decide where to go. There is nothing worse than everyone getting hungry and wandering from place to place to see what was on the menu!
 
Mostly I mean heavy, greasy stuff. My kids love sandwiches but aren't huge fans of burgers, for instance. We ate at Flo's V-8 cafe last time we were there and while the food was yummy, we walked away wanting a nap instead of being ready to tackle all the stuff we had planned for the afternoon. We like salad, sandwiches, grilled chicken, fruit (chocolate covered is fine), that sort of thing. Also we don't eat huge lunches, and so anything with table service is kind of a waste for us.

Thanks to everyone for the suggestions. We went to Universal Orlando over the holidays and they REALLY didn't seem to have a lot of options, I think we'll be much better off on this trip now that I know where to look.

I don't know if you had this when you went to Flo's last time but the Citrus Turkey Salad is my family's go-to non-greasy meal in DCA. I remember it being really good but I haven't had it in about a year. I also agree with the other commenters saying Boardwalk Pizza and Pasta as another good place in DCA for more "healthy" options. Another recommendation is to have an order of fruit at any of the food stands around the parks. The fruit was surprisingly good and relatively cheap (for Disney of course) and is a nice break from other greasy snacks. Finally my family has started to split meals across the board (sandwiches aside) at Disney as we find the portion size way too big. This has greatly helped with how full we feel in the park and has greatly improved our enjoyment of the park.
 

My DD (9) really likes the fire grilled citrus chicken off the adult menu at Cocina Cucamonga on the pier. I like it too. Allears.net has all the CA/DL menus if you want to explore them.
 
In addition to non-greasy choices, we have found it works better to have breaks. We plan on a morning snack break, order light at lunch (eg 2 meals for 3 people) and an afternoon snack break. That way, tummies are not too full, and our feet get a break too!
