Lots of good suggestions above... We try to book the last lunch seating available at the dinner places, as the menu is the same and can be up to 30% less expensive. They we catch a Mickey Bar or something as we stroll around and don't ever miss dinner. We also don't eat breakfast out, it is just so expensive for what you are eating. We do that at the hotel, maybe catch a snack if we need one in the park, have a huge lunch, and then another snack later. Even with our kids they don't complain about one big meal and breakfast in the room. It gives them something to do while DH and I are getting ready!
