Oh gosh, the Beach Club is our favorite WDW resort!!! (We are DVC members and our favorite DVC resort is our home of OKW, but the BC is the first WDW resort we stayed at, so is our favorite "hotel").
So, spend loads of time at the pool as Rob says. It's wonderful and has something for everyone including pool side wait service.
Yachtsman's Steak House is wonderful. Have a pre (and post!) dinner drink at the Crew's Cup lounge and ask for Ricardo or Oscar for your server. They are both incredible people!
If you want a wonderfully romantic adults only dinner you may want to consider Bistro de Paris (upstairs at France). They have an incredible tasting menu there and they will allow you to share if you so choose (including the wine pairings, which while extra can be shared too). It's an involved meal, and not rushed so it's perfect for two.
California Grill gets good reviews for romantic dinners, and Jiko at AK and Artist Point at WL are two other great choices.
Cirque is fabulous and if you can go and take the family.
We really enjoy Cape May at the BC too. They have a great character breakfast! We are serious shellfish lovers too, so thoroughly enjoy the Cape May dinner buffet. It features steamed clams, shrimp and mussels along with clam chowder, a fish (usually the ubiquitous salmon) other meats (beef, ribs, sausage, chicken) pasta dishes, veggies both hot and cold, and a cold salad bar selection. There is a separate buffet table for desserts. If you like clams and or mussels it's a must do.
The BC is an easy walk from the IG to the WS, so you can pop in and out of EPCOT at will. It's not a terribly long walk to DHS from there either. You can take the ferry to either park too.
MK and AK are a bus ride away and that is the only downfall of this deluxe (all of them actually, except for AK) they share buses with the other resorts in the immediate area and it's often a crowded bus that you'll be taking wherever you go. Bus to DTD also.
You can walk to the boardwalk side and enjoy their live acts of an evening. They are simple little things, musicale Mark and his rolling piano, a banjo player, a sword swallower and things of that nature. You can rent water craft and surrey bikes too.
It's a great place to stay and a really nice area. Have a wonderful time!
