Help me plan our December trip!

We go to Disney every year. Generally October or July. This year our only is heading off to college so we are taking our typical July trip and bringing a friend so she can go off with friend and DH and I can do our thing (like hang out at Trader Sams for hours).

We will be going back in December to finally do another holiday trip. Our last was 2008. Lots has changed and we are not planners. I typically don’t do ADRs and if not for FP+ we generally try and wing it on park days (or used for) but this holiday trip we will need to plan to get all the holiday things in and of course of Star Wars.

So, what is our must do and see for a holiday trip?

Holiday Storytellers at EP World Showcase (Norway is our favorite)
Candlelight Processional (depending on the narrator and the day, you may want to do a dinner package for this)
Castle light up at MK (happens at dusk every day and then again during MVMCP if that's still happening when you go)
AK has new stuff coming this year
Have no idea what they will do at HS for the holidays, so keep an eye on that one
Gingerbread house at Grand Floridian

Also the Christmas Tree Trail at Disney Springs and resort hopping to see the decorations.
