Help me pick my EPCOT dining plan :)

I have been to WDW many times so making time for each and every ride is not a huge priority. This trip it's just my 70 year old mom and myself taking on the Deluxe Dining plan. Some FW rides, WS shopping and a movie or two.

I have changed our EPCOT day plans so many times my head is spinning. What from the following would you pick?

1. Lunch at LeCellier, Dinner at Le Chefs de France
2. Lunch at Le Chefs de France, Dinner at Yachtsman Steakhouse
3. TS breakfast ?, Dinner at Yachtsman Steakhouse
4. TS breakfast ?, Dinner at Le Chefs de France

I have eaten at all these restaurants but it's been a while. Not sure of the quality of each now. Also, how long will dinner be at the Yachtsman? That may be a consideration. We are eating at Narcoosees, California Grill and Wolfgang Puck Cafe the other days.

I would choose:
3. TS breakfast ?, Dinner at Yachtsman Steakhouse

The reason being that Yachtsman was our favorite on the last trip - dinner took about 1 to 1.5 hours....was phenomenal.

I also like starting with a good breakfast, snacking thru the day, and heading to a good dinner. I didn't LOVE Chefs de France, although I know it gets good reviews...it's all about personal experiences and mine just wasn't over the tp great here.

For breakfast I would do Akershus....or Kouzzina.

I would choose the same option. I loved the Yachtsman Steakhouse. It was a great dinner and an enjoyable time. YOu could also do a sit down breakfast and the Yachtsman later. That is what we usually do (like a Crystal Palace or something)
 

Personally, I would probably do option 3, breakfast then dinner at Yachtsman. The one time DH and I did a TS lunch and a TS dinner in the same day I was miserably full at the end. For the breakfast option I would choose Akershus or a resort before you get to Epcot. Maybe Kona, Boma, or Cape May at Beach Club.

I'd go Option 3, with Kouzinna's, Boma's, or The Wave at the Contempory for breakfast. Of these 3 I've only been to Boma's for breakfast, but based on the menus, I'd love to try the other 2.
 
Thanks everyone for your comments. I just changed our plans to a 12:00 Chefs lunch and 7:50 Yachtsman dinner. May still go with the early breakfast instead of lunch. Suggestions for non-character breakfast near EPCOT? We will not have park hoppers and are staying at POFQ.
