Help me help my aunt

They just decided that they want to go to WDW in Feb for the first time. I planned our first trip in October and it took me 8 months to do it. So helping her plan in a matter of days has me overwhelmed. I need to help her plan out ADR's fpr 7 days. They are going to do non hopper as of right now to save on $$. Their cast is Aunt eats anything, Uncle meat and potatos , cousin 11 girl diabetic low carb, cousin 6 girl eats like a bird. i have only been to one sit down in each park so I would love to hear what you have to say. I am trying to get her to hop to give her more dining options and they are on the dining plan.
 
We ate on the dining plan in November. Here is where we ate:

Planet Hollywood - great meal, lots of choices on the menu

Whispering Canyon Cafe - our favorite place, would definitely please the meat & potato guy

Liberty Tree Tavern - character meal, traditional Thanksgiving type foods

Crystal Palace - character buffet, we really were not impressed with the food, choices were very limited

Sci Fi - very cool atmosphere, kids would love it, menu was somewhat limited but our food was good

If this is their first visit, I would also recommend Chef Mickeys. Another place that gets good reviews that I have never tried but would love to is 'Ohana.

Are they on a tight budget? Meaning, are most of their meals going to be sit-down or counter service?
I have to give props to the Tusker House in AK, for both breakfast and lunch. I think it's one of the better counter service places, and the food is consistently good. They have a decent breakfast plate that comes with eggs, sausage or bacon, potatoes and a biscuit, they have cereal, they have good cinnamon buns...for lunch, the rotisserie chicken is awesome and comes with veggies and mashed potatoes.
I'm fond of Le Cellier for the steak eaters, if they're going to do sit down...for the more adventurous type, we really liked Spoodles. And Earl of Sandwich and the Wolfgang Puck express at DTD!
