Help me decide

Headed to Flower and Garden for two nights for my birthday May 11-13th and my husband wanted to come along. We arrive at MCO at 2pm on Monday. Trying to decide what to do for the first night. EPCOT or eat at Cake Bake (which is high priority)then go to After Hours at MK. Tuesday will be all day at EPCOT with dinner at Flying Fish. Wednesday we don't need to leave for the airport until 2pm so I was thinking MK if we don't go Monday night. I also think MK won't be as busy b/c it closes at 5:30 that night. Another option would be get a massage and eat lunch at Cake Bake. Just wondering what you guys would do. For some reason, I'm having a hard time deciding!
 
We are doing 2 nights in early May, also. We arrive at MCO at 7pm so we'll do supper/people watching at Polite Pig, most likely, that night, or find a restaurant bar/lounge for supper and some cocktails. On our first full day we will resort-lounge-hop and eat at favorite places. Our second day is F&G, all day. We fly home the next morning. My husband is not a big theme parks guy and I will be going to Disney for a week in November, which influenced our decision making process.

In your case, I wouldn't spend the money for a theme park ticket on Monday. If you land at 2pm, with having to get to Disney and checked into your hotel, the earliest you'll get Epcot is 4pm, if not later. I'd save the money, have supper at CakeBake, tool around Disney Springs OR do the After Hours at MK (depending on how tired you might be from an early travel morning). I'd go all out at Epcot on Tuesday, then maybe hit MK on Wednesday morning (remembering that you would have to leave your luggage at your hotel as you can't take it on Disney busses, if you don't have a car).
