Help me decide please : )

Planning 3 nights staying at Universal on site, 2 nights visiting family at the beach and figure I can squeeze in 3 -4 nights at Disney last week of May/early June. Was planning to use uber to get to Universal, then my parents will pick us up, then they can drop off at Disney and then uber to airport. So no car at this point.

The Plan:
Day 1- my parents would like to go to Blizzard Beach with us. Drop luggage off somewhere, spend the day at Blizzard Beach, then drop us off. at a hotel. Would need to get dinner at the hotel so hopefully decent food or maybe walking distance to decent food.
Day 2- 1 day at HS and possibly hop over to Epcot just to see the topiaries, wake up at the crack of dawn, go to bed close to 9pm, don't stay out that late, will eat at the parks
Day 3-1 day at MK another crack of dawn wake up and stay out until it closes. Will eat at the parks
Day 4- sleep in and fly home

Priorities:
cleanest rooms with a location that is convenient for HS/EP and MK since I will either need to take a shuttle or pay for uber, I don't want to be the last in the line to get in!

Seems like I can stay at the Swan/Dolphin around $259
Coronado Springs around $213
Riverside $236
Pop $184
All Star Sports $146
Port Orleans $251

All the others were pricier than I wanted or close to AK and I am not planning a visit there this time.

Any thoughts? It will just be my 12 year old, 19 year old and myself so we can walk briskly and no nap times, etc.

Based on what parks you are doing I would stick with S/D or POP - given you are park centric, I would save the money and do POP. You can eat at the food court there or at AoA across the bridge. Or you could take the Skyliner and eat TS at CBR, Riviera or Boardwalk area. MK is the only one you would need a bus.
