I went one year the week after Labor Day. There were no crowds at all. So nice you could walk on to just about everything. Our longest wait was like 15 minutes. However, it was very very hot and humid.
We also went in Sept 2005, the Friday before Labor Day thru the following Thursday. I agree there were no crowds. However I did not find it to be "very very hot". I am from TX so maybe I am use to it. It did rain every day which made it muggy for a while, but it also made the parks even less crowded. My DD3 never complained, but we did take breaks and went back to the resort. I have never been any other time to compare to, but if we could do it, we would be going back for the free dining. (Already have a surprise trip planned for December for DD.)
The lines are shorter, but yes it is hotter. We get the park hopper passes and spend most days at the waterparks and the evenings in the other parks. Get the cheap disposable rain ponchos at wal mart and always have them with you, a short afternoon downpour is common. We go every other year in Sept, and would never consider going at any other time.
We have gone a couple of times in Sept. All were hot and humid but a lot less people, except last year with the free dining it seemed so much more crowded than past Septs. I guess this year will be a repeat.
I thought our trip in february was uncrowded...until we went in September. I couldn't believe how EMPTY the parks were! After being there for spring breaks as a child, the lack of crowds and lines almost made it feel like there was something missing. I agree that it was HOT (never below 90 for a high) but there were very few lines to wait in so the heat was much more bearable.
