Cooking HELP! Coconut Rum?!

I have a nice, large bottle of Malibu Coconut Rum.
And I have noooo idea what to do with it!

(Besides drink! :rolleyes: That's a no-no at my college)

I'd like to make some sort of grilled coconut shrimp,
but all I can find online is like the breaded stuff from Red Lobster or some shrimp with a peanut curry sauce. We aren't peanut curry people.

Does anyone have any good coconut rum recipes? Shrimp or not?
 
I've got a recipe for a Christmas cake where you soak the fruit in Malibu first (it uses tropical fruit instead of ordinary raisins etc.) I'mm dig it out when I get home, or try the Women's Institute website.
 
If you can make ice cream or sorbet a little coconut rum for a coconut or lime sorbet would add a nice flavor punch to it. But don't add too much because to alcohol would keep the ice cream from freezing.
When I bake cakes I use rum flavored or not flavored to add to simple syrups that I brush on the cakes before I frost them. It helps keep the cakes moist.
 
Bananas Foster!!!!!

I think it tastes even better with Malibu instead of regular rum!

Ingredients

* 1 stick butter
* 1/2 cup brown sugar
* 4 bananas peeled and halved, cut lengthwise
* 1/4 cup dark rum (use Malibu)
* 2 T cream

Directions

Melt butter in a large skillet.
Add brown sugar and stir together.
Add the bananas and cook until caramelized over medium-high heat.
Pour in the rum and catch a flame off of the gas stove or a BBQ lighter. Stand back when ignited and flambe. Be careful; a flame will shoot up above the pan. When the flames are out, stir in the cream.

Serve the delicious sauce over ice cream, waffles, cake, anything. It is great with toasted coconut on top.
