Wow busy aren't we?, So catching up...Apple cider acid content does tenderize the meat. First time I did it was a pork roast with baked apples. O9ne day I decided to try with beef and it was so good we do it all the time now. You can call me my screen name3 if you want bu I prefer Sherri and it is shorter.
it doesn't make your meat taste like apple? yes, i could see where the acid would break down the fibers and make a very tender roast.
