Does anyone have a favorite healthy recipie sthey'd like to share? This can be breakfast, lunch, dinner, or a snack.

I've been wanting to try new healthy things, just don't know what is a good dish. Feel free to post away!

I don't have a healthy recipe off hand. But here's a very tasty recipe:

Chicken Chalupas

flour tortillas
4 lg chicken breasts, cooked, cut up and cook with taco seasoning and minced onions
2 cans cream of chicken soup
1 pint sour cream
3/4 lb. Grated jack cheese
3/4 lb. Grated cheddar cheese
green onion tops

Combine chicken soup, green onion tops, sour cream, and most of the cheese. Set aside 1 1/2 cups fo the mixture. Combine chicken with remainder of mixture; put in tortillas; roll like enchiladas and place in greased baking dish. Pour set aside mixcture over the top and sprinkle with more cheese. Bake 350 for 45 minutes.
 
I take thinly sliced Chicken breasts (boneless and skinless).
Poke breasts with a fork so the fat will drain while cooking.
Marinade: garlic, pepper, dijon mustard, terryaki and curry (all to taste and depending on how many chicken breasts)
Marinate in a plastic bag for 1-2 hours. Refrigerate.

You can grill 6-8 minutes (each side) or bake on a broiling pan 9-11 minutes each side. Cut open to make sure there is no pink.
Very low in calories and very high in taste.
 
Well, here's dh's chicken soup:

Skin 4-5 pieces of chicken. Place in pot with one can chicken broth, two stalks chopped celery, two chopped carrots, and seasonings. Add 4 cups of water (estimate, keep an eye on it and add more as needed).

Simmer for an hour. Remove chicken and debone it, then return to pot. Add one cup rice.

Continue to simmer for about another half hour.

Serve with whole wheat crackers.
 

This recipe comes out delicious. I get lots of compliments on it, even from people who usually don't like salmon.

1/4 cup softened butter
1 large clove garlic,minced
1 tbsp. chopped fresh dill or 1 tsp. dried dill weed
1 tsp. grated lemon peel
1/2 tsp. salt
1/4 pepper
1 medium salmon filet (about 1 lb.)

1. Spray broiler pan with nonstick cooking spray. In small bowl, blend all ingredients except salmon. Spread mixture on top of salmon.

2. Place salmon on broiler pan skin down. Broil 4-6 inches from heat for 8-10 minutes per inch thickness at thickest point of salmon, or until fish flakes easily in thickest area.

Serves 4
 
I make a nice pasta dish with Turkey Sausage -

1 package Jenni-o HOT Turkey sausage
1 clove garlic minced
1-2 cans fat free chicken broth
1 package sundried tomatoes(not in oil) chopped
1 bag frozen broccoli heads
1 box bow tie pasta cooked drained

Brown the sausage in a deep skillet- poke to let juices flow. When copmpletely done remove from pan, add garlic and sautee for a minute, pour 1.5 - 2 cans of chicken broth into skillet, scrape bits off of bottom of pan, add sundried tomatoes and broccoli, put lid on and allow to steam.

Slice turkey sausage and add to broth and vegetable mixture. Allow to simmer for a minute or two - season to taste with salt and pepper, (I also add cayenne) - thicken with a sprinkle of wondra then toss with the hot cooked pasta.
 
Apple Oatmeal Cookie

1 1/2 cups----quick oats
3/4 cup-------flour
3/4 cup-------whole wheat flour
1/2 cup-------brown sugar
1 tsp---------baking powder
1/4 tsp-------baking soda
1/2 tsp-------salt
1/2 tsp-------cinnamon
1/2 cup-------rasins
1 cup---------peeled and chopped apples (granny smith is best skin is a little chewy otherwise)
1 each--------egg (beaten)
1/2 cup-------honey (use a non stick spray in measuring cup to keep from sticking)
1/2 cup-------oil ( I use conola)
1/3 cup-------milk

Combine oats, flour, sugar, baking powder, baking soda, salt and cinnamon, mix to combine.
Next add chopped apples and raisins. Mix to combine. In seperate bowl add eggs, honey, oil, and milk, mix to combine.
Slowly add wet to dry to form a mooth batter. Spoon out onto cookie sheet (just like chocolate chip cookies) and bake for 10 - 12 minutes @ 375F

I forget how many these make, but it is never enough DD and DH love them, the neighbors can always tell when I make them, they come running too. I've used other apples, but granny smith seem to work better. If you like a sweeter cooke use a sweeter apple. These cookies are sweet with the tart apple.
 
Baked cinnamon chips with Apple Berry Salsa

This is a Pampered Chef recipe and every time I make it for one of my shows, everyone seems to love it. I think you could probably use the salsa to top angel food cake or ice cream (frozen yogurt) too.

Baked Cinnamon Chips

Ingrediants:
8 (7 inch - small) tortillas
1 tablespoon sugar
1/4 teaspoon cinnamon.

Mix cinnamon and sugar. (Or buy some in the spice section at your grocery store.) Lighly spritz tortillas with water and sprinkle with cinnamon and sugar. Cut into small triangles just as you would a pizza. Bake at 400 degrees for 8-10 minutes. Cool completely.


Apple Berry Salsa

2 medium Granny Smith apples (peeled, cored and diced)
1 pint strawberries, diced
2 kiwi, peeled and diced
1 small orange
2 tablespoons packed brown sugar
2 tablespoons apple jelly or apricot jam

Mix diced apples, strawberries and kiwi in bowl. Zest orange, add to bowl. Juice orange to measure about 2 tablespoons of juice. Add to bowl. Mix in brown sugar and jelly. Refrigerate until ready to serve.

Serve with cinnamon chips.
 
Basil Chicken Breast

Boneless, skinless chicken breasts - 8 (2.5 lbs)
Low-fat yogurt - 3/4 cup
Cornstarch - 2 tsp
Bread crumbs - 1 cup
Fresh basil - 1/2
Grated parmesan cheese - 2 tbsps

Preheat oven to 375.

Place the chicken breasts side by side in a baking dish.

Mix lowfat yogurt, basil and starch. Then spread over the chicken.

Sprinkle the bread crumbs and parmesan cheese over the chicken.

Bake the chicken at 375 for 30 to 40 minutes. Until the chicken is cooked.

Here's a "NO GUILT" Chicken Pot Pie recipe

1 can condensed Cream of Chicken Soup (Campbell's has a 98% fat free one)
1 pckg (approx 9 oz) frozen mixed vegetables
1 cup cubed cooked chicken (can be the packaged kind)
1/2 cup milk (can be skim)
1 egg
1 cup Bisquick (Reduced fat)

1. Preheat oven to 400 degrees.

2. In a 9" pie pan, mix soup, vegetables and chicken.

3. Mix milk, egg and Bisquick. Pour over chicken mixture.

4. Bake 35 mins or until golden brown

You can also get creatvie and add onion, scallion, etc. to step 2.
 
If its healthy I wont eat it, even if it taste good

Walnut Mandarin Salad

DRESSING

Combine:

1/4 cp Olive Oil

1/4 cp rice wine vinegar

2 TBSP orange juice

2 TBSP honey

SALAD

4 cps Spinach or lettuce

1 can (11 oz) mandarin oranges

3/4 cp walnuts

1/2 cp sliced thin red onion
