Healthier eats on I-75

We are driving from Chicago to WDW, and as I am planning my trip, I am hoping to earmark some cities that might have better options than McDonald's.

We will be bringing a cooler, but stopping to eat is part of the fun. We will be leaving at 2am. We will eat breakfast in the car, and probably just stop for breaks in the morning. I am thinking we will need to stop for lunch somewhere in or near the Chatanooga Area, maybe even a little before. And maybe Macon for dinner.

So, I am hoping for somewhere like Noodles and Company, Chipotle, Boston Market, etc. We can only eat so many burgers and fries. :)

Suggestions???
 
Be a little bit careful---some of the meals at those places are not particularly good for you. And, some burger joints have other things on the menu that aren't too bad. For example the chili at Wendy's is surprisingly decent (less than 30% calories from fat with no trans fat). Heavy on the sodium, but you can't have everything. ;)

Take a look at a recent copy of "Eat This, Not That". Your local library should have a copy.
 
Not sure if you are taking 65 to 24 or 65/74/75 when you say just before Chattanooga, but to find chains like those, you need to stick to the larger cities. If taking 75, look in Knoxville. If taking 24, then look around Nashville. I can say that none of those chains exist along I75 south of exit 108 in KY, and doubt any exist the first 50 miles into TN.
 
We live just outside of Springfield and are goin at the end of August. We go to FL about once a year I-24 to 75(not always disney) so here is what we do. We are big on sitting down to eat when we do stop usually. Leave at around 2 or 2:30 and eat "snacks" (breakfast bars and the like) in the car until about Clarksdale, TN and stop at Cracker barrel (beware sometimes it takes forever there, but there are a lot of other options in Clarksdale). Then right around Macon we do stop for dinner, usually a quick burger cause by that time we just wanna get there. Seeing as how you are about 3 hours north of us, I would not want to wait until Chattanooga to eat lunch.
 

Chattanooga to Macon is only 200 miles- probably not enough time between lunch and dinner (unless you get stuck in Atlanta traffic). We stayed in Chattanooga, up near Hamilton Place mall (a few miles out of your way), and there were TONS of restaurants.

We stopped for a couple of great meals on our last trip to Orlando from Indianapolis. Not sure they'd work for your trip down, but maybe for the way back? We ate at the Brickyard Cafe and Mariah's in Bowling Green, KY and at a BBQ place in Valdosta, GA- think it was called the Big Pig or something like that. All of those places were great and worth the time stopping. We always plan in time for meals since we really don't like fast food.
 
They are not located off a lot of the exits along I-75, however one healthy restaurant I can think of is Panera Bread.
