Won't be going until Summer of 2019, but we're already looking at Western Caribbean port calls. Which excursions, keeping it under $100 per person, would y'all suggest?

This is so dependent on your family, ages, and interests! Not all excursions are doable with small children for example, or seniors. With $100 per person you have TONS of options!
Check out the descriptions of some of the port adventures on the website for each port to get a feeling for what's offered.

You're right...should have given more info. Family of three, son will be 12 during the cruise. He loves the beach and anything adventurous. The zip lines look incredible, but I just can't justify the cost. We have the funds (or else we wouldn't be cruising Disney), but I hate spending money unless I feel that I'm getting a good value.

In the Caymans, we did Stingray City Snorkeling (G09) and it was amazing. Deep water snorkeling (10+ feet) at the reef edge with between 5-10 full sized stingrays at any given time. Incredible snorkeling adventure. This December we're doing Shipwreck and Reef Snorkeling (G15) which looks to be just as amazing. In Cozumel, we went on the cultural trek and went to Tulum (CZ06). The ride each way was long, but the tour guide filled it up with a mini-lesson about the Yucatan and the Mayan culture. The site was incredible. Our kids were 12, 10 & 10 when we did these. I had to go get the twins out of the water on the stingray city snorkeling.

In Jamaica we had a let down. We did Chukka Taste of Jamaica at Good Hope Estate (FA28) and it was disappointing. The big house - wasn't, the plantation was run down, the docents at the house had a cursory knowledge of the area and the site and the lunch was late and bland. Yeah, not impressed. Take it for what it's worth.

we wanted to do this, but at midnight at 90-days out it had already sold out. So, could be a blessing you don't have your heat set on it, it's very sad when you suddenly have to make an alternative decision

We are doing the Shipwreck and Reef Snorkling this December too (23Dec Fantasy). I hope it is going to be just as positive as your previous snorkling trip! Sounds like it will be
