Headed to Disney after 4 years...questions

It's been 4 long years since I've been to disney. I need some updated info. We will be at disney the week of August 29th.
1. I get three days, so the question is which 3? Mo-Wed or Tue-Thursday?
2. I love WOC sould we do the dessert or the dinner package?
3. What's the deal with fast passes? I hear they have changed and now have kisoks? it use to be the didn't enforce the the return time, do they now?

1. I would do Tue-Thurs but really, I think you could do either.

2. We've done the dinner package 3 times and are picking the dessert one next month. To be honest, since Paint the Night is leaving early September, I might be inclined to do a PTN dinning package instead and just grab a FP for WOC.

3. With the exception of enforcing the end time on the fast passes, nothing has really changed with them in the past 4 years. You still get the FPs at kiosks located (usually) right near the attraction. Show FPs such as WOC and the Frozen show are not connected. Also, as far as I have read here, the FP for Buzz is not connected so you can grab one of those in addition. You can get another FP either when you current window opens or two hours after you have pulled one. The two parks are still not connected so you can have FPs for both parks.

2. I love WOC sould we do the dessert or the dinner package? - Dessert package. You get an actual seat, enough food to make a light dinner and alcohol (& / or other beverage - coffee, hot chocolate, water, soft drinks)
3. What's the deal with fast passes? I hear they have changed and now have kisoks? it use to be the didn't enforce the the return time, do they now? - The distribution has not changed. You do now have to use them during the return window time. No more collecting them to use later in the evening.
