Is there a HDDR FAQ thread i am missing (I searched but not coming up with anything) or a good place to look for an overview of the meal, tips, pricing/discounts, transportation? Thanks!

I don't recall ever seeing a thread just on Hoop Dee Doo, but the site does have info on it here:

The Disney Food Blog and/or Disney Tourist blog likely have good rundowns as well.

Tips are included and it's a prepaid fixed eat as much as you want served to you menu unless you've food allergies/issues and that would best discussed with Disney Dining before you get there. Transport would depend on where you are coming from so giving that info would get you a clearer response.
No idea what discounts are available.
