Hard Tacos

Recently, I had the idea to break the hard taco in half and then load up the two halves with veggies, topped with sour cream. This way, my family gets more veggies in their diet. We still make it with meat too but this is a nice, refreshing change.
 
Great idea!

FYI -- they sell tostadas made specifically for this purpose. They are circular, like tortillas, but hard like a hard-shell taco.
 
Sounds yummy! What kind of veggies do you use? Do you grill them or are they raw?
 

So far, we've only had tomatoes, lettuce, olives, cheddar cheese
but now I'm thinking of cucumbers and raw zucchini.
 
Ya, we just get tostada shells and do this. :) I use cucumbers on my tacos all the time, love the crisp cool crunch, I do cooked zucchini and squash but not raw, I don't like them raw.
 
We fry the corn tortilla(circle) or you can buy them already made.

1.top with refied beans, lettuce, cheese, tomato and hot sauce

2.top with refied beans, ground beef taco meat, lettuce, cheese , tomato, sour cream and hot sauce (sliced avocado is good too)

3.Top with refied beans, lettuce ,tomato (optional)then topped with mexican cotija cheese(smells like stinky feet but oh so good), and a salsa
 
I have been doing this for a few years....it's SO good!

Mine, I put black beans, charred zucchini, summer squash, onion, and bell pepper on, then a sprinkling of cheese, chopped tomatoes, chopped lettuce, sliced avocado, a few cilantro sprigs, a squeeze of lime juice, some hot sauce, and jalapenos. So tasty!

I cannot do "tacos" with soft shells...I need the crunchy texture mixed with all the soft veggies..
 
They are called tostados when you use the round ones with beans, lettuce, etc. I make them for dinner a lot. It's a good way to get a meatless meal. I often make Mexican rice to go with it.

We have done black bean tacos by mixing 2 cans of low-sodium black beans with the taco seasoning pack (also reduced sodium, but I wouldn't call it low). Then top it just like a regular taco.
