I don't know if it will be the same in May, but for us they were €25 per adult and €11 per child, so that should give you a rough idea

when you purchase half board and use them do you get a set menu

You don't have to get a set menu, but at the non-buffet table service restaurants, if you use your voucher for the full cost, yes, you will be given a set menu.
You can also use your vouchers at face value at any restaurant which participates in the half board options, and eat from the a la carte menu, then just pay any difference.
