Ground Beef what to do with it?

So I have a cheapo- elbows, beef and tomato soup that I make when I am desperate for an easy meal.

Tonites problem is that I don't have the tomato soup.

So what is your go to ground beef meal?

I have cheese, onions, crescent rolls, diced tomatoes, Rotel, Tortillas.....probably lots of ingredients if I looked.

Any ideas??
 
What about making some kind of taco meat with the ground beef, ro-tel, cumin, chili powder, onions, etc. and roll up in the crescent rolls (don't separate into triangles - use two for a square) with cheese? Then bake them according to the package directions on the crescent rolls.
 
Sounds like chili without beans... and you can even roll them up in the tortillas and bake them for a bit.. a not quite enchilada.

You can also make quesadillas with the tortillas and save the crescent rolls for another time.
 

Do you have taco seasoning? Flatten the crescent rolls to fit the bottom of a 9x13 pan, bake about 5 minutes. Then top with the taco meat (you can spice it up a little with your Rotel), top with cheese. If you have another package of crescent you can put this on top, but if not no biggie. Bake at 350 until browned.
 
Thanks for the great ideas- I kind of combined a couple of them- I'm using the crescents- all one layer- then Cheese- then beef mixture- rotel and a bunch of spices- more cheese another crescent roll layer- brushed with butter- back in oven.

Ground beef, mushroom soup, rice and peas mixed together. Sounds bad, but it's pretty good and it's using things most people already have in the kitchen.
 
This is too funny, Java...we had the exact same problem tonight. Had the ground beef and a few components but needed the tomato soup too. So we went with Plan B! DH and DS had sloppy joes at Scout Camp made with ketchup, mustard, onions, and green peppers, and we're trying it tonight. They said it was yummy, but I dunno...they were starving at the time!

You'll have to let us know how your crescent roll meal comes out! :)

BTW, Ceecee, we do something similar with the beef, cream of mushroom and rice (we have peas or beans on the side). We've dubbed it "Monster Mash". Tried to get the kids excited to eat it when they were little by naming it something silly...and the name stuck!
 
My mom used to make the same thing, ground beef, onions, cooked elbows, but just canned tomatoes, not the soup. She called it goulash, which I don't really think it is. Great comfort food.
 
I know you already have had dinner, but just wanted to post my standby ground beef (or ground turkey) recipe. I make my version of beef stroganoff. It is 1lb. of ground beef or turkey, garlic and onion. Cook, drain and mix in cream of mushroom and about 1/3 cup water. Heat and dollop some sour cream in and heat again. Serve or rice or egg noodles. I almost always have all this on hand, so I cook it in a pinch and serve with corn or peas.
 
It was a HIT! The secret ingredient that I always have on hand is the Sazon Goya(It's near the Mexican stuff in the supermarket) it's a little spice packet(I use both the Con Culantro y Achiote as well as the Con Azafran- now it has MSG in them so if you are allergic don't use it)

So I baked off a layer of crescents for about 5 mintues(not really done but just getting started.)
In a fry pan I sauted- 1 lb Ground Beef in olive oil, Then added 1 can Rotel, the 2 spice packets ,Cumin, Garlic, onion powder- and a squirt or two of Tomato paste. (But it looked too dry so I added in a can of chopped tomatoes-drained)
I let that cook for about 20 minutes- maybe 30.
Then layered about a cup of Monterey Jack shredded cheese over the crescent- then topped it with the beef mixture
Then topped with some Cheddar cheese.
Then One more layer of crescent rolls.
Brushed with a little butter and back into the oven for about 10 minutes until the crescent is cooked.

MMM It was so yummy I say it would feed 6 decent eaters.
The teenager in my family wolfed it down. So I am guessing good for a crowd of teenagers.

Funny thing is I never heard of Rotel up here in the North then I read about it on here in some recipe. I found it and now use it all the time. Thanks for the great ideas.
 
LOL! I had the same issue last night. I just whimped out and made burgers :rotfl: I had cream of mushroom soup, knew I should have tried that with the beef and rice!
