Ground beef recipes....cheap and easy???

Hungry Jack Beef Casserole

INGREDIENTS:
1 lb. lean ground beef
1 [16 oz.] can pork and beans
3/4 cup Kraft barbecue sauce
2 tbs. brown sugar
1 tsp. minced onion
1 can Hungry Jack biscuits
1 cup shredded Cheddar cheese

PREPARATION:
In a skillet or Dutch oven, brown ground beef; drain well. Stir in pork and beans, barbecue sauce, brown sugar, and minced onion; heat until bubbly. Pour into 2 1/2 quart casserole. Cut biscuits in half to form 20 half circles. Place cut side down around edge of casserole and sprinkle shredded cheese over the top. Bake at 375° for 25 to 30 minutes, or until biscuits are golden brown.
 
Stuffed Cabbage or peppers. I prefer cabbage, so this is how I make it. The peppers are similar, except that I think, you don't have to precook them, you just cut them open, seed them. Add filling, soup, and bake. My mom always used minute rice and canned tomato soup, but I prefer regular rice and a mix of soup and canned tomato. If you want to make this more elaborate you can add herbs. Mint is a good one. You can also add onion, fresh chopped tomato, chopped pepper, garlic, cheese. It's a very flexible recipe.

Stuffed cabbage

Ground beef, chicken, turkey or any mix of lean ground meat. (about 1 1/2lbs) You can use more or less depending on how far you want to stretch the meat.
Head of green cabbage
one cup of uncooked rice (makes about 3 cups prepared) My mom used to use minute rice, but I prefer regular white rice.
tomato: tomato soup (about 4 cans), chopped canned tomato, plain tomato sauce, chopped tomato, or a mix
1. Cook the rice. Use either water as directed on package, or a mix of water and tomato soup.
2. Meanwhile, boil the cabbage. As it cooks, remove the tender outer leaves using tongs. You can run the head under water to help, and then return it to the boiling water. As you remove cabbage leaves, set them to drain in a colander.
3. Brown the ground meat with a little Pam or oil. Break it up as it cooks.
4. Mix a can of tomato soup (and enough water to reconsitute it) with the meat and rice.
5. Roll about 1/3 cup of meat/rice mix inside each cabbage leaf. The larger leaves will hold slightly more, the smaller ones slightly less. Pack them together in a rectangular casserole dish. Usually a 9 x 13 works, but slightly larger will be good too.
6. Pour two cans of soup (agian reconsittued with water ) over the cabbage rolls.
7. Cover loosely with foil and bake for about 40 minutes at about 375 degrees.

8. This dish can be prepped ahead of time. It can be reheated. It can be frozen. Indeed, It's almost better the second day. It takes me at least 30 minutes to make this, but since you can make it in large batches ahead of time, the second meal you get from the recipe has no prep, other than reheating.



In polish, the name of this dish means 'little doves,' but lots of other countries have a similar dish.

Then there's always Lasagna, too.

Where I used to work, the cafeteris ladies used to make an amazing soup called 'escarole soup.' It had greens and tiny meatballs. I'd love a recipe for that soup! But I haven't been able to find it. It was a family Italian recipe.
 
You can make lasagna very easily and quickly. Buy the no-cook noodles and jar spaghetti sauce. I personally prefer to use small curd cottage cheese rather than ricotta (I find it stays moister). Cook up some hamburger and add the jarred sauce. Very yummy and quick!
 
Ground beef - browned with onion and garlic
Low Fat, Low Sodium Cream of mushroom soup
1 can corn
cooked noodles.
lots of black pepper

Mix all together..Yummy...can add mushrooms if desired.
 

Ok this is kinda weird but I really like it...it's kind of a comfort food to me.

Brown 1 lb of ground beef and add one (larger but not huge) can of baked beans (I prefer Bush's). Then I add a squirt or two of ketchup, brown sugar and molasses until I get a flavor I like. That's it!! Simple, cheap and yummy!
 
I love the Bisquick recipe for Cheeseburger Pie...yum! Its kind of like a quiche.

I am a huge meatloaf lover too...sweet and sour meatballs over rice...brown gravy and meatballs over noodles.

Cheesy Beef Nachos:

brown beef, drain, mix with salsa.
Pour over nachos on cookie sheet
Sprinkle with cheese, put in oven for a few minutes just to melt the cheese or if you're just making one or two helpings you can put them on plates and microwave
Top with favorite toppings

Just hit the internet with Tator Tot Casserole and you'll get tons of recipes but here's my families version which actually has no tots......my mom hates them so I substitute another type of frozen potatoes.

Teresa's Tator Tot Casserole (without the tots)

Layer in a large casserole dish


1 to 1 1/2 pound Hamburger meat that has been browned with worchshire sauce, onion salt and pepper.
1 can of chopped green beans or about 1/2 bag chopped brocolli
Frozen hash browns (the southern style, they're chunks)
Pour over this a mixture of Cream of Mushroom soup (Family size with about 1/3 can of milk or water) and small can Brocolli Cheese soup (no milk or water with this can).

Smush it all down compact and bake at about 375 till bubbly and thick, usually about 45 minutes, then pull out the pan cover with a layer of shredded cheese (not fat free it won't brown) and broil on low till brown and crunchy.

So good and it makes a really good lunch the next day.

YUM...HALUPKIS!!!! OR Galumpkis...haven't had those in a long time!!! :sunny: I made my own nut kolaches last Xmas and everyone loved them!


My easy hamburger contribution:

Ground Beef Pierogie Queso Dish:

Brown ground beef, drain off fat.
In a microwave safe bowl throw in chuncks of velveeta and mild to hot or whatever you can tolerate salsa (like the queso dip) microwave for 1 minute and stir. Keep heating until all melted.

Boil how ever many pierogies you want for 3-5 minutes. (Potato Cheddar are the best). Drain.

Put a few pierogies on a plate, scoop on some ground beef, and then drizzle with the queso. And a dollup of light sour cream or a few chives or something.

Good, but by no means a light dish.


Another really good one (don't have the recipe at the moment) is a Taco casserole. It had beef, salsa, chili powder, a can of white corn, shredded cheese and coarsely chopped tortilla chips. My DH LOVES it.

I didn't know if anyone would want to know since this ground beef list is a lot of casseroles and such.

I have ground beef, and used a seasoning packet that I got at Wegmans (it was in the international area) and put it with it. So I used an envelope of seasoning and cut up an onion with the beef and cooked those two things together

Once looking at the seasoning packet, I realized that I had everything in my cabinet. The ingredients were curry, (I have red and green curry), coriander, cumin and a dash of red pepper flakes. If I do that again, I'll just do a shake of each spice in the pot when the meat is cooking.

I then steamed some vegetables that I had in hand and had some rice reheated.

Our family isn't big on casseroles.
 
I just made a fantastic individual meatloaf recipe I found in the Wegmans magazine.

First you chopped up in a food processor some celery and onions and butter sauted them until soft. -not a lot just for the bottom of the pan.

Then I added fresh parsley cut up with some fresh breadcrumbs (I just crushed two bread ends in my food processors)

I added two eggs as well. Then I mixed it all together and made 8 small meatloaves and baked them in the oven.
 
Cheap and Easy

1 Bag potatoes o'brien (the ones with green peppers and onions)
1 or 2 pounds of hamburger (depending on preferance or how many to feed)
Frozen Corn - as much as you want

Brown the hamburger in large skillet, drain, add potatoes and a little cooking oil and about 1/4 cup of water. Cover for a while so the potatoes cook. You may have to add a little more water or oil as it cooks. Add some of the frozen corn about halfway through. Salt and pepper to taste. My husband likes sliced cheese on top of his. Super quick, easy and cheap.

Another favorite is a version of sloppy joes my mom calls messy marvins. Brown 2-3 pound of ground beef and some onion, drain, add 2 entire cans of Chicken Gumbo soup (no water) and simmer down. My picky daughter absolutely loves this dish. Serve on hamburger buns with toppings of your choice. It's a great leftover as well.

She also has a recipe for easy Mississippi Goulash that I will have to get, it's really good as well.
 
my family likes this dish....

Potato Beef Casserole
1lb ground beef
1 onion
1 can cream chicken soup
1 can beef vegetable soup
4 - 5 sliced potatoes


brown the ground beef and onions, drain the fat
mix beef/onions together with both soups and potatoes
put in greased casserole dish
bake at 350 for 1 hour

easy and good ~ the kids like to call it pig slop!
 
Indian Corn

1 lb or more ground beef
1 big can tomato soup (condensed)
I or 2 cans corn (to taste)

Brown beef and drain. You can add onion if you want, my family won't eat them. Add tomato soup, and 1/2 the water called for on the can. Add the corn. Heat and eat with nice crispy italian bread.

You can add whatever spices you want, I usually use salt, pepper, garlic powder and a little celery salt.
 
We use mac ' cheese and add ground beef seasoned with seasoning salt. This dish holds heat and my kids gobble it up.
 
Wow--there are some awesome recipes in here that sound cheap and yummy! We are supposed to be having chicken and pasta tonight but now I am considering gettting out some hamburger instead!

My two recipes are
Chilli mac--basically I take leftover chilli and add elbow noodles to it. Kids like it a lot. (I always use whole wheat pasta btw and they never even noticed when I switched.)

And Cheeseburger Rice--a Kraft recipe
Brown the hamburger, add two cups of cooked rice and ketchup and mustard to taste. I also shake in some dried onion or dice up some fresh if I have it. Add in some diced lowfat Velveeta or slices of American cheese--I use about 6 oz and stir until it melts.
 
Hi, I met and married my husband in MN and let me tell you they can do anything with a lb of ground beef and a cassserole dishe there. It is called hotdish. My husband requested one a year after we had been married and I had no Idea what he meant. Here are a couple of favorites. Also, I have recently started buying fresh ground beef at Sams or Costco and will cook all at once. Freeze in 1lb portions in ziploc bags. I can make tacos, sloppy joes, or add the meat to a hotdish and it cuts prep time by 15 minutes because I do not have to brown the meat. Just put the frozen ground beef in a glass dish and microwave for 2 minutes, then add seasoning packet for tacos and water, or sloppy joe stuff, or add to spaghetti sauce etc and heat til hot--add veggies and dinner is ready.

Tater tot Hotdish
1 lb browned ground beef
2 cans french cut green beans drained and rinsed
1 can condensed mushroom soup (we use healthy request)
1 bag frozen tater tots

mix first three ingredients, add some pepper to taste, put half into casserole dish, add single layer of tater tots, add rest of mixture, put a layer of tater tots on top. bake at 350 for 30-45 minutes until hot through

Mexican Frito Hotdish
1lb of browned ground beef with taco seasoning package and 1/2 15oz can tomato sauce
15oz can refried beans mixed with other half tomato sauce
1cup shredded cheddar cheese
2-3 cups fritos corn chips
layer in casserole dish or square pan 1/2 chips then beef mixutre, then bean mixture then top with cheese and chips.
Bake 30-40 minutes 350
This can get salty so I reccomend using reduced sodium tomato sauce. we often use more chips than called for

other easy meals are open face "burgers"

Ground beef, onions, ketchup, and mustard mixed on an open half hamburger bun. Place a piece of american cheese on top and bake until cheese melted and hot through
Can also do the same with groung beef, spaghetti sauce and a slice of provolone or mozzerella cheese on open faced hamburger bun.

I will see what else I can find, in true MN style the meal must be served with jello salad to be complete. :confused3
