Great chili recipes anyone??

I am looking for a REALLY good chili recipe. We are going camping this weekend and want to make it ahead of time and just heat it in a slowcooker when we want it one night.....something kinda easy.....more or less, with easy to come by ingredients......I have been searching....but would rather get hands on opinions......I am sure someone out there has a "to die for recipe"

PS......ground beef kind....we did the white last year and want just the regular kind......
 
I did one once with a can of something that was really the "main" ingredient....and DH hated it.......can't remember what it was...."chili helper" in a can or something like that???
 
The recipe board may be of help here too.

Here is how I make chili, learned from my mom.

I take about 1.5-2 pounds of lean ground beef and brown it with a large onion. Drain, if necessary.

Add one large can crushed tomatoes, one large can of tomato puree and one small can of tomato paste. Add two small cans of kidney beans, dark or light, doesn't matter. Finally add 2-3 bay leaves whole and let simmer for about one hour.

Before serving I add a good bit of oregano, maybe 2 teasp., salt, pepper, red chili pepper and about a half teasp of cumin (or to taste). I throw in various other spices if the mood fits.

We eat ours with grated sharp cheddar cheese sprinkled on top and with crackers. It freezes well too.

I saw an episode on the food channel where people put a Hershey's kiss in the bottom of the bowl before ladeling in the chili and we tried it. It was a very, non chocolate flavor we all liked. Of course, we can't keep kisses around here long enough to use them that way!
 

thanks RNMOM....I am figuring we can just "wing it"......my mom and dad make a good chili but of course, not "set" recipe.....so, I guess we will just see what we can do......
 
I make vegetarian chili about once a month and freeze it. You could probably adjust my recipe to include meat.

1 chopped onion
1 chopped green pepper
A few stalks of celery
3 cloves garlic
3/4 cup water or red wine
Saute all these until vegetables are tender
Then add
2 cans (14 oz) diced tomatoes
2 cans tomato paste
2 cans dark red kidney beans (rinsed) (Sometimes I use 1 can kidney beans and 1 can pinto beans
Small bag of frozen corn
small bag of frozen green beans
1 Tablespoon cilantro
2 Tablespoons red chili powder
1 Tablespoon cumin

Simmer for 45 minutes
 
Here's my easy recipe for chili that people just gobble up. It's great for camping because you can just brown the ground beef before you leave and take it with you in a baggy.

1 lb ground beef
1 onion chopped

Brown ground beef & onion. Add:

2 cans diced tomatos (the big cans--I think it's 28 oz)
1 can kidney beans
1 can corn (drained)
1 can diced green chile

Simmer in the crock pot for 2-3 hours. I love to make this for potlucks at work because I just brown the meat the night before and bring everything else in to work the next morning and throw it together and it's ready by lunchtime.

I make the easiest chili ever and people seem to like it. Here goes:

Brown 1 can ground beef with 1 medium chopped onion and 1 clove crushed garlic. Transfer to a med. large pot. Add 1 can kidney beens and 1 can tomato soup. Mix together in empty soup can: 1 t. salt, 1.5 T chili powder, 1 t. cumin, 1 T. flour and 1/2 can water. Add to pot and simmer to blend flavors.

Spices should be adjusted to your taste. My kids like this recipe because they're not really big on tomato chunks. I serve this with corn bread and grated cheese.
