Gravy thickener?

Thanks to you all when I "cried for help", I've managed to go 3 days now on the Atkins induction phase. It's been REALLY REALLY tough, to say the least. I am SO addicted to sugar, it's not funny. The withdrawals are really difficult to deal with & I'm hoping they will begin to lesson soon.........please!

I have a question though. My DH who decided to do this with me (yeah!) is craving gravy with his roast beef tomorrow. Anyway to thicken it without using flour or cornstarch? Or is gravy not acceptable anyway, anyhow :) I'm assuming it is because it is a fat :) But I'm still a newbie :)

Also, since I'm craving sweets every minute of the day even when I'm full (even in the middle of the night!), is there anything "sweet" that I could have that would be acceptable? What can I snack on? Please don't say vegetables - they are just not doing it for me! LOL! If I don't find something soon, I don't think I will be able to hold out much longer :(

Hi there! I am sorry I can't help you with the gravy question, but I can help with the sweet craving. I usually will have a cup of decaf coffee with cream and splenda. I love cream, so I HAVE to measure to be sure I only use 2 TBSPs. Another favorite of mine is Diet A&W Rootbeer with a splash of heavy cream. A mock Root Beer Float!
Hope this helps. I know some people also like sugar free jello with whipped heavy cream sweetened with splenda.
 
Could you serve an au jus with the roast instead of gravy? Very flavorful but not thickened, so it should be Atkins-friendly.


Au Jus

2 Cups beef broth
1 Tbsp. Worcestershire Sauce
1/2 onion

Bring broth to a boil, then reduce heat. Add Worcestershire sauce, and half onion. Simmer for 30 minutes. Discard onion. You can add drippings from the cooked meat if you like.

I have a friend who uses a product called Thickenthin (available at Atkins.com [beware - very expensive]. She uses it to make gravy. Says it is fine hot, but gets a little slicky (probably not a word), when it gets cold.

I used a lot of SF Jello on induction (didn't worry about whipped cream).

Also love the coffee with splenda and cream. Sounds good, maybe I'll go make a pot.
 

Thanks everyone! Especially about the tip of eating sugar-free jello with heavy whipped cream (I forgot I could have whipped cream!). I'm off to the store to get some! I can't wait!!! :) The au jus sounds good too - that is what DH and I will have this afternoon with our roast. My DH will be happy about the "mock" root beer float idea too!! These posts were such a boost of encouragement to me this morning when I turned on my computer - thanks!
 
For a sweet snack I like the Mock Danish as a snack or dessert. What about Beachgirl's cheesecake recipe too? It is cream cheese, splenda, eggs, sour cream and a splash of lemon and vanilla - I know it is Atkins appropriate but not sure about induction? I've shared that with MANY people and they have all loved it.
 
I had a craving for salisbury steak last night
okay but the recipe I saw on tv food network had mushroom gravy with it
I fried my salisbury steak, sauted the mushrooms and added a little of the pan dripping from the meat with a can of gravy from Franco American. It is a fat free gravy can said 3 grams carbos in 1/4 of gravy (5 servings per can) not bad at all. I didn't eat more than 1 serving so I thought that was okay.
It tasted pretty good to me after 5 days of SBD
