Okay - so after my 2nd phone fail during a race I am definately getting a GPS for Christmas.

What would you recommend and why? My needs -

A good running walk that is reliable.
Keeps GPS distance/pace/time
Has programmable run walk intervals
Will preferrably be able to tell me my last mile pace and not just my last interval pace.
Allows Data to upload to computer for analysis and storage
Has a battery life of at least 8 hours in GPS mode.

A complete bonus feature that I don't know if it exists but it would be great to be able to download my playlist to my watch and pair my wireless headphones to the watch but I would not sacrifice any of the above features for this.

Also what benefits do you gain from adding a HRM to your watch? Do you recommend adding it? How about a foot pod? What exactly does this do and do I need it?

I'm a Garmin guy as well, but you need to make sure you get a model that has the Run/Walk interval reminders. I have an older model now (305) after having a 210 and having some battery problems with it. From what I understand the newer model Garmins that look more like real watches have a glitch in them that sometimes cause the batteries to be drained rather than charged so you'd wake up for a run only to find a dead battery. It wasn't all the time, but my wife has had the same problem occasionally with her 110. Despite that, we love them.
