I would like to make it into a bread, like you do banana bread, zuchinni bread. Anyone have a recipe to share? I can not seem to find anything on line.

Your question inspired me to find a recipe, my garden has produced its share of eggplants and zuchinni's, so I think I will try this myself.

I have never heard of eggplant bread. I love eggplant but it can be very bitter, let us know how the bread turns out!
