My neighbor just had her second baby!
The baby will be in the hospital for a while because he was premature (Preeclampsia) and only 3lbs, and the hospital is a good distance away. I'm assuming that mommy will be stay up there, but the new daddy and their older son will be here, and I'm thinking that it will be nice to make them a meal or two that will last/freeze well and be tasty.
Also, the now big brother was just put on a diet (and he only just turned 3!), so whatever I make I don't want to be to fatty, but still tasty enough that a 3 year old will want to eat it! I was thinking about a Shepards Pie, but I don't know what else, or if thats to fatty.... Any ideas with recipes would be much appreciated!!
