On our trip last March we discovered that we maximized the numbers of rides later in the evening. Most people left after the fireworks so if it closed later we were able to walk onto ride, after ride with no wait. We probably rode more rides in that last hour and a half then we did all day.
at Fantasyland for example Peter Pan still had a long wait, but we walked on to Winnie the poo (which is always super busy) and we were finally able to do story time with Belle. -Which turned out to be an amazing experience.
at Animal Kingdom most people start leaving around 3-4 so we were able to ride Everest 5 times in a row with no waiting.
If you think your kids can handle it I would get to the park mid morning early afternoon and book your fast passes for when it's the busiest peak time during the day.
