Gluton free trip to WDW

Does anyone have any hints to dining with a celiac on vacation?

I know to let them know when we make our PS. I know to let our server know too.

Any secrets we should know?

I was going to post the Executive Chef's office, but I notice it is in the link that tmfranlk posted. The one thing that the article mentioned is the McDonald's French fry wagons at some parks. We haven't found those to be open when we were there over Spring break this year (so don't plan on them; it will be a special treat if they are).
Most people who have posted on the DIS about their special dietary needs, gave good gades to WDW.
