my daughter was gluten free & vegan for 1 trip in summer '09 (she's still a vegan but the celiac was a misdiagnosis)
pretty much every table service place was able to handle it, here's a list of what I remember:
Sanaa- spicy baked cauliflower appetizer, a curry, daal and rice entree, and fruit and coconut for dessert
The Wave- a citrus-y salad, the vegetable stew without the mixed grains, and sorbet
The Brown Derby- we were there for the imagineer lunch, so it was four courses, gazpacho for the soup, cobb salad without the meat, cheese, etc., a tofu dish with vegetables and cashews (maybe curry?), and sorbet and berries for dessert
Cape May Cafe- we were there for the breakfast buffet. they made gluten free vegan mickey waffles and breakfast potatoes and grilled asparagus
Hollywood and Vine- we were there for the breakfast buffet, they cooked some waffles, I'm pretty sure they were van's brand and they also made breakfast potatoes with peppers and mushrooms
Tusker House- we were there for the breakfast buffet, they had a few things on the buffet that were gluten free & vegan (a mango coconut fruit salad and breakfast potatoes (they can also get them separately from the back if you are worried about cross contamination)) they also made mickey waffles, a tofu scramble, and tater tots.
Chef Mickey's- this one was rather disappointing. we were there for dinner. they made a noodle dish with vegetables that was totally bland and tasteless. they did make some good cinnamon cookies, but they were extremely crumbly.
Restaurant Marrakesh also disappointing. they just had some grilled vegetables & rice, and for dessert, a fruit salad that looked like it came out of a can.
Garden View Lounge (Afternoon Tea) she had the buckingham palace package which we worked with the chef to modify a bit: pb&j tea sandwiches, fruit salad, and strawberries.
As for counter service, I'm not sure if the veggie burgers are gluten free because they have switched brands since that trip. I know that pretty much anywhere there is pizza they will have gluten-free crusts, and some places will have gluten free vegan soy cheese, but if they don't, you can get a pizza with just veggies. I also recommend Sunshine Seasons in The Land, because they have tons of options there. We stayed at Port Orleans Riverside that trip and their food court was wonderful. They were able to make gluten free mickey waffles for breakfast, and for lunch and dinner, they had gluten free pasta at the pasta station, gluten free crusts at the pizza station and they could customize a salad at the salad station.
