This will be my first trip back to WDW since being diagnosed with Coeliac - are some restaurants better than others to dine in with GF menus? Also how has everyone else managed not to succumb to all those disney treats that are everywhere... I can see myself having difficulties

I suggest you go take a look around on the disABILITIES! board as there are a lot of discussions and reviews about gluten free dining. I've got a bunch of reviews linked in my signature but they're not only gluten free but also a whole bunch of other stuff free. WDW really is the easiest place you'll ever travel gluten free.

Most places don't carry gluten free menus. What will happen is this. At CS locations a manager will come out with an ingredients binder and will go over all of your options with you. At TS locations a chef will come out and pretty much ask you what you want to eat and will tell you if he can come up with a GF version for you or not and if not will generally offer suggestions based on what you asked for. At buffets the chef will walk you through the buffet letting you know what items are GF and what items can be made GF and will bring you food from the kitchen to avoid cross contamination on the buffet (sometimes you have to ask as they don't all offer but they're good about doing it when you ask).

I typically stick with Disney owned restaurants though a few non-Disney owned ones that I consider to also be safe are Teppan Edo and Kouzzina though I haven't actually eaten at Teppan Edo as a chef advised me against it due to sesame allergy (they use a lot of sesame).

I love this site http://www.allergyfreemouse.com/dining/gluten-free-at-walt-disney-world-parks/

DS has multiple food allergies and eats quite well at WDW. He has never had a problem. You need to note your allergy in and ADRs you make. I would also email special diets for the list of specialty foods available at each location so that you can have an idea of what is available and where. Most QS locations have gluten free rolls, some have GF chicken fingers, pasta and pizza. My DS is in love with Amy's Mac n Cheese and finds it every trip.
